Iodine values are an important and widely used process within the food industry. The iodine values allow us to determine and understand the properties of fats within food, allowing us to handle and treat these foods correctly 1 for spoilage as well as determine nutritional and physical properties including shelf life . Examples of these 2 properties are seen with soap manufacturing using coconut oil due to its low iodine value of around 7-10 . Iodine values are an important component to understanding the degree of unsaturation within fatty acids. The iodine value is a measure of iodine absorbed by 100 grams of oil or fat. This iodine fixes to the C=C double bonds within unsaturated tails of fatty acids, with more unsaturated tails resulting in a higher iodine value. With more unsaturation within the chains, the more reactive and susceptible the fat is to oxidation, which in turn, results in a 3 shorter shelf life .
