Tomato sauce additionally contains tannins that easily stain clothing, which can be compounded by stain-causing oils in the sauce, that also exist in a tomato’s pomace and skin. (6) Tannins are a class of bitter and astringent chemical substances that are a part of the wider class of compounds known as polyphenols. (7) The staining properties of tannins on clothing can be attributed to their chemical structure and their ability to form complexes with proteins and other organic molecules. (8) When tannins come into contact with fabric, they can bind to the fibres through a process known as adsorption. (9) When baking soda reacts with an acidic substance, such as tannins, it can undergo a neutralization reaction. (10) In this reaction, the bicarbonate ion (HCO3-) in baking soda reacts with the hydrogen ions (H+) present in the acidic tannins. This results in the formation of carbon dioxide (CO2), water (H2O), and a corresponding salt.
